1 baguette, sliced into ½ inch slices, ends discarded
2-3 tablespoons olive oil
Kosher salt
Freshly ground black pepper
1 garlic clove
2 cup RIPE tomatoes, cut into small pieces
1 tablespoon torn basil leaves



Arrange the bread slices on a sheet tray. Drizzle with olive oil, season with salt and pepper. Flip over the bread and repeat the procedure on the same side.

Toast the bread in a preheated 350 degree oven until lightly golden brown. Remove and allow to cool enough to handle. Rub each slice of bread with the garlic clove and transfer to a serving plate. Discard the garlic clove after you’ve finished all of the bread slices.

Toss together the tomatoes, basil, a light drizzle of olive oil and season with a pinch of kosher salt. Spoon some of the tomato topping onto each slice of bread. Serve immediately.
