Carrot Ginger Dressing

2 carrots, peeled, chopped
2 tablespoons ginger, peeled, chopped
1 shallot, chopped
3 tablespoons rice wine vinegar
2 teaspoon soy sauce
1 teaspoon sugar
2 tablespoons sesame oil
¼ cup plus 2 tablespoons vegetable oil
3 tablespoons water



Puree together all ingredients until smooth, season with salt.
