Buffalo Cauliflower Wings

Ingredients
1 head cauliflower, cut into small florets
1 tablespoon olive oil
2 cups all-purpose flour
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne powder
2 cups milk
2 eggs
2 cups breadcrumbs
¼ cup butter
1 cup of your favorite hot sauce
Blue cheese for serving, if desired

Directions
Preheat the oven to 425 degrees. Line a baking sheet with parchment paper, spray with nonstick cooking oil. Toss the cauliflower florets with the olive oil. Whisk together the flour with the onion, garlic and cayenne powder, place in a bowl. Whisk together the eggs and milk and place in a separate bowl. Place the breadcrumbs in a large plastic bag. Dredge the cauliflower in the flour mixture, shaking off the excess. Submerge in the milk mixture and then place into the breadcrumbs. Coat well and transfer the florets to the prepared baking sheet. If desired, spray the cauliflower with nonstick cooking oil to help the florets brown. Bake for 25-30 minutes or until golden brown and tender but still crunchy. Remove and set aside.

Melt the butter in a small saucepan. Whisk in the hot sauce to emulsify. Toss the florets in the hot sauce and serve with blue cheese, if desired.
