Fried Chicken Arepa

Ingredients
1 cup Masarepa
1 ½ cups warm water
4 tablespoons butter
1 teaspoon kosher salt
grapeseed oil for frying
 

Directions
Place the masarepa in a large bowl. Melt the butter in the warm water. Starting with about half of the water begin mixing the dough. The sough should be soft and pliable. We used about ¾ of the total liquid when making our arepas. Discard any unused liquid.

Form into the arepas into flat little pancakes about 3/4 inch thick and 3-4 inches in diameter. Have a plate lined with paper towels for the arepas once they come out of the hot oil.

Heat about ½ inch of oil in a large saute pan and fry the arepas for 1-2 minutes on each side, until lightly golden brown and cooked through. Remove and allow to drain on paper towels, season with a little salt while warm. Spilt open the arepas and fill with desired toppings. We used grated jack cheese and fried chicken, cut into thin strips.
