Fried Plantains

Ingredients
2 large ripe plantains, cut into 1 inch thick bias slices (must be black)
1 cup vegetable or canola oil
Sugar for dipping
 

Directions:
Heat the oil over medium heat in a small sauté pan or small sauce pot. Fry the plantains until golden brown, about 3-5 minutes. If desired, roll in sugar before frying.

Drain on paper towels and serve as a side dish or enjoy by themselves.
