Goat Cheese and Cheddar Biscuits

Ingredients
2 cups self-rising flour
2 tablespoons sugar
¾ teaspoon salt
2 tablespoons butter, chilled in freezer
¼ cup shortening, chilled in freezer
½ cup crumbled goat cheese
1 cup grated sharp cheddar cheese, divided in half
2/3 cup heavy cream
½ cup buttermilk
AP flour for forming biscuits
Your favorite jam for serving
 

Directions
Preheat your oven to 375 degrees. Whisk together the flour, sugar and salt in a large bowl. Using the large hole on a box grater, grate in the shortening then butter into the flour mixture, Add the goat cheese and half of the cheddar cheese into the mixture, toss to combine. Add the buttermilk and heavy cream and gently fold the liquid into the into the flour mix. The biscuit will not be completely mixed and should resemble cottage cheese. Add a little more buttermilk and heavy cream if needed. Form the biscuits by dropping heaping tablespoons into a bowl of AP flour. Dust off the excess flour, lightly form the biscuit into a round and place on a baking sheet with parchment pepper. Top the biscuits with the reserved cheddar cheese. Bake at 375 for 12-17 minutes or until golden brown. Serve warm with your favorite jam.
