Green Papaya Salad

1 green Papaya, peeled, chunk into chunks and julienned on a mandolin with attachment
2 tablespoons dried shrimp (optional)
1/2 cup cherry tomatoes, halved or quartered
3 tablespoons peanuts, slightly crushed
1/4 cup cilantro, roughly chopped
1/2 cup fresh squeezed lime juice
1/2 cup sugar
1/2 cup fish sauce
2-3 Thai chilies, chopped fine
1/2 red onion, thin julienned
3 leaves fresh basil, chopped

Combine the fish sauce, sugar and lime juice in a small bowl, mix well. Combine all other ingredients together, toss with desired amount of dressing. Serve cold.
