Mac n' Cheese

Ingredients
Serves 4
1/4 cup butter
2 tablespoons garlic, chopped
¼ cup shallots, chopped fine
3 tablespoons flour
1 teaspoon salt
2 cups milk
1 cup cream
9 ounces of your favorite small shaped Pasta, cooked al dente
1 cup Fontina cheese, shredded
1 cup Sharp Cheddar cheese, shredded
½ cup fresh Parmesan cheese, grated
1 cup Jamon Serrano, julienned
Breadcrumbs for topping, if desired

Breadcrumbs:
1 tablespoon olive oil
 

Directions:
Melt the butter in 4-quart saucepan over medium heat. Add garlic and shallots, sauté until soft and just barely golden.  Stir in the flour and salt and cook for 1 minute, stirring constantly.

Add the milk and cream, stirring to blend. Bring to a simmer, stirring frequently. Continue to simmer over low heat 3-4 minutes, stirring occasionally. (Mixture will thicken as it cooks.)

Remove from heat. Add cheeses and Jamon Serrano; mix gently. Add the pasta, mix until well coated. Pour into 1-1/2 quart casserole dish. Cover and let stand 5 minutes before serving. Top with breadcrumbs, if desired.
