Patty Melt

Ingredients
1 pound good quality ground beef, 80/20
8 slices rye bread with seeds
4 slices of your favorite cheddar cheese
2 cup yellow onions, caramelized
2-4 tablespoons of butter
Thousand Island dressing for topping
 

Directions:
Form the ground beef into 4 thin, oval-shaped patties. Season well with salt and pepper and cook over medium heat in a sauté pan for 2 minutes on both sides. Meanwhile, melt a couple tablespoons of the butter on a griddle pan or sauté pan and toast the bread (with a slice of cheese on top of each slice of bread) until lightly brown. Top the melted cheese with a little thousand island dressing. Top 4 of the eight slices of now toasted bread with each burger, a spoonful of the onions and a slice of the toasted bread on top.
