Queso Fundido


1 tablespoon extra-virgin olive oil

1 cup yellow onions, small diced

2-3 garlic cloves, minced

1/4 teaspoon chili powder

1/4 teaspoon paprika

1/4 teaspoon smoked paprika

1/4 teaspoon ground cumin

1/4 teaspoon dried oregano

1-pound meltable Mexican cheeses like quesadilla and Oaxaca (you can also use substitute mozzarella or Monterey Jack) I recommend a blend of a few varieties

1 4-ounce can chopped green chilies, drained well

Tortilla chips, for serving



Heat the oil over medium low in a cast iron skillet. Add the onion and garlic and cook until soft but not browned. Add the spices and toast until fragrant. Add the cheese and chopped green chilies. Stir gently until the cheese melts. Taste for seasoning and adjust if needed. Serve immediately with tortilla chips.
