Sauteed Fish

Ingredients
Badia olive oil
Lemon
Salt and Badia pepper
Filet of fish, like snapper
 

Directions:
Use a sauté pan large enough to hold the filet of fish with enough room to heat it well. Add enough oil to just coat the skillet, heat over medium high heat. Dry the fish with paper towels, season with salt and pepper. Place the fish, skin side down into the sauté pan. Cook about 5 minutes, lowering the heat to medium about 1 minute after you added the fish. Using a fish spatula, flip the fish over and lower the heat to medium low, cook only a minute or two, or until just cooked through. Serve with a little lemon.
