Shrimp Ceviche

Ingredients
16 Jumbo Shrimp, u10 or u12 size, peeled, deveined and sliced in half lengthwise
1 tablespoon Kosher salt
1 tablespoon ginger, peeled and minced
2 tablespoons celery, minced
½ habanero or jalapeno, seeded and chopped
2 tablespoons lime juice
¼ red onion, julienne fine
¼ cup cilantro with stems, chopped
1 cup popped popcorn
¼ cup corn nuts
½ cup sweet potato, medium diced, cooked in boiling water
 

Directions:
Combine the shrimp, salt, ginger and set in the cooler while preparing the rest of the ingredients or 30 minutes. Add the chlies, lime juice and allow to marinate in the cooler about 1 hour. Mix in the onions and cilatnro. Serve with popcorn, corn nuts and sweet potatoes.
