Shrimp Vuelve a la Vida

Ingredients

24 (21/25 size) shrimp

Sauce:
2 tablespoons olive oil
2 tablespoon fresh garlic, minced
Zest of 1 orange
2 cups fresh orange juice
1 cup fresh lime juice
3 cups ketchup
½ Serrano chili
¼ cup cilantro stems, chopped
2 tablespoons Worcestershire
1 tablespoon Tabasco
Salt and pepper

For the Garnish:
¼ cup red onion julienne
1 avocado
1 cup popped popcorn
¼ cup cilantro leaves

Directions for Shrimp:
Add the Old Bay seasoning to a pot of boiling water; reduce the heat down to a simmer. Add the shrimp to the water and cook for 30 to 45 seconds or until the shrimp just begin to turn pink. Use a spider or tongs to transfer the shrimp from the water to a cookie sheet or flat plate and immediately place in a cooler until the shrimp has cooled. Peel and devein the shrimp.

Directions for Sauce:
In a small saucepan, heat the oil on medium heat. Add the garlic, stir for 1 minute. Add the orange zest, stirring. Add the orange juice, heat through. Pour all contents of the saucepan into a blender. Add all other ingredients, puree until very smooth. Season with salt and pepper.

Directions for Garnish:
Mix the shrimp with half of the sauce. Serve the shrimp in a fun glass, spoon some sauce over the shrimp then top with a few julienne strips of onion, pieces of avocado, popcorn and cilantro leaves.
