Spinach and Feta Quiche 

1 1/2 tablespoons olive oil
1 shallot, brunoise
2 cloves garlic, minced
8 cups spinach, tough stems removed, roughly chopped
Kosher salt
Freshly ground black pepper
5 eggs
2 cups heavy cream
1/2 cup feta cheese, crumbled
Pinch nutmeg
Prepared pie crust

Heat the olive oil in a large sauté pan over medium heat. Add the shallot and garlic and cook for 1-2 minutes, stirring. Add the spinach and cook until the water is released and has evaporated. Season the mixture with salt and pepper. Remove the mixture from the pan and place into a clean, lint-free kitchen towel or paper towel and squeeze to remove the excess water, set aside. In a clean bowl, whisk together the eggs and heavy cream. Add the nutmeg, feta and spinach mixture. Season with salt and pepper. Pour into a prepared pie crust and bake at 350F for 45 minutes or until lightly browned and set.
