Tequila Chicken Wings 

2 pounds chicken wings, cut into 2 pieces
2 tablespoons shallots, minced
1 tablespoon garlic, minced
1 tablespoon ginger, minced
1-2 serranos, sliced paper thin
½ cup tequila
1 tablespoon agave or brown sugar
¼ cup chicken broth
juice of 1 lime
¼ teaspoon Kosher salt
2 scallions, sliced thin
¼ cup cilantro leaves

In a large nonstick sauté pan, cook the wings on medium heat until golden on all sides, about 8-10 minutes. Add the shallots, garlic, ginger, chilies and cook for 2 minutes. Add the tequila, allow flame to die down; add the brown sugar and chicken broth. Cover and simmer about 8 minutes. Uncover, cook over high until wings are cooked and sauce forms a glaze. Add the lime juice, season with salt and garnish with scallions and cilantro.
