Truffle French Fries

Yukon Gold or Idaho potatoes
Oil for frying
Sliced Truffles in oil
Parmesan Cheese

Cut the potatoes into 2 inch long x ¼ inch strips. Place them in ice water for a couple hours, drain and dry well. Fry in vegetable oil at 245F until they are soft and tender, about 5-7 minutes. Drain and cool completely or freeze for later use. Fry at 350F until golden brown and crispy. Salt and serve.
