Vietnamese-style Chicken Wings
1/3 cup sugar
¼ cup nuoc mam
4 shallots sliced thin
ground black pepper
Place the sugar in a skillet with about 1 tablespoon of water, allow to caramelize over medium heat, shaking the pan occasionally. When golden brown, remove from the heat, stir in the nuoc mam carefully. Place back onto low heat, add the shallots and cook until softened. When soft add black pepper to taste.
Fry the chicken wings or grill them. Toss the cooked wings into the nuoc mam.
Garnish with lime wedges and cilantro.
