Watermelon Greek Salad
1 large wedge watermelon, cut into 1 inch thick piece
½ English cucumber, peeled and cut into ½ inch pieces
1 cup cherry or grape tomatoes (multi-color, if available) cut in half
Large chunk of feta, crumbled into large pieces (about ½ cup)
6-10 mint leaves, torn
Some dill leaves for garnish
¼ cup olive oil
1 tablespoon red wine vinegar
Pinch freshly ground black pepper
¼ teaspoon onion powder
¼ teaspoon garlic powder
Whisk together all ingredients for the dressing.
Place the watermelon slice down on your serving platter. If servings a crowd, use several slices and top each with extra ingredients.
Top the watermelon slice with cucumber, tomatoes, feta and torn herbs. Top generously with dressing and serve immediately.
