¼ cup butter
¼ cup granulated sugar
½ teaspoon salt
1cup water
1 cup AP flour
4 eggs
Olive oil or canola oil for frying
Cinnamon and sugar for dusting

Chocolate dipping sauce:
½ cup cream
2 tablespoons water
4 ounces semi-sweet chocolate

Directions for sauce:
Heat the cream and water to a simmer. Add in the chocolate and whisk until combined.

Directions for Zeppole:
In a saucepan, combine the butter, sugar, salt and water. Heat until the sugar dissolves, bring to a boil and add all the flour at once. Reduce heat to low, mixing constantly with a wooden spoon until the dough comes together, about 2-3 minutes. Allow to cool to just room temperature. Using a hand or stand up mixer add the eggs one at a time until the batter is nice and thick. Cover with plastic and allow to rest for about 15 minutes.

Add about 2 inches of oil in a large fry pan or skillet and heat to about 350 degrees, scoop the batter by the tablespoonful into the oil, cook for about 4 minutes or until golden brown. Blot on paper towels and dust with a little sugar and cinnamon. Serve with chocolate dipping sauce if desired.
